2 C cooked or 1 15-ounce can garbanzo beans, drained and rinsed
2 medium cloves garlic, minced or pressed
1 medium tomato, diced
1/2 medium red onion, chopped
2 T parsley, chopped
1 T fresh lemon juice
2 T extra virgin olive oil
Salt and pepper, to taste
Combine all ingredients
Optional:
1/4 C feta cheese
6 sliced kalamata olives
1 t rosemary
