MANDEL BREAD

This cookie is probably the easiest cookie I make and one of the most liked because of its delicious simplicity.  It's quick and has ingredients most kitchens have available at a moment's notice.  This recipe has been in my family for 90+ years.


1 Cup sugar
3 Cups flour
3 eggs
3/4 C oil
1/2 tsp lemon juice
1 tsp vanilla
Optional (but amazing):  1 tsp almond extract
1 tsp baking soda
2 tsp baking powder
Optional:  nuts and/or chocolate chips. 
Cream eggs and sugar.  Add oil, lemon juice.  Add flour, baking powder and soda. 
Roll into 4 "snakes"  to fit the length of 2 ungreased cookie sheets.
Optional:  Sprinkle with a cinnamon sugar or plain sugar.
Bake 350 15 min.
While hot, run a long knife under the loaves to loosen from pan, then slice into 1/2" slices.  Optional:  slice on the diagonal
for a slightly longer cookie.
Mandatory:  eat all the ends before you toast everything else  :-)

Turn all slices on their sides, then toast until they look toasted.

Note:  All of the "optionals" are truly optional.  The cookie is delicious without the "optionals".
This is a GREAT dunking treat!
